Gluten-Free Blueberry Lavender Mascarpone Tart

Citrus, blueberries and lavender make for a delicious flavorful combination. And the flavor of blueberries works deliciousness perfectly well with Mascarpone cheese.

Mascarpone Cheese is an Italian double or triple creamed cheese made from cows milk and is best known for its use in Tiramisu and baked cheesecakes.

Mascarpone is the equivalent of cream cheese. Though mascarpone cheese is higher in fat (75%) which gives it a buttery rich flavor.

Apart from its silky creaminess, the cheese gets its mild sweet flavor from the citric acid used in the production of the cheese. Where as cream cheese production uses a lactic acid producing a more tangy flavor.

A good culinary lavender will add a rich “under” tone to the dish it’s used in, as well as sweet floral notes. It is used like a spice, the same as nutmeg, cinnamon or allspice, among others.

Using a small amount of lavender as a spice can take something simple and basic, like this blueberry tart, and turn it into a gourmet dessert. If you like the smell of lavender, chances are you’ll love the taste as well.



Gluten-Free Blueberry Lavender Mascarpone Tart

1 gluten-free tart or pie shell – Find recipe here

36 ounces frozen blueberries (about 6 3/4 cups)

1 cup sugar

juice of one lemon

1 cinnamon stick

1/8 teaspoon fresh nutmeg

1 1/2 teaspoons culinary lavender buds

1/2 cup water

2 tablespoons instant tapioca (can sub cornstarch) * See Cooks Notes

8 ounces mascarpone cheese

Cook’s Notes

You may be asking if cornstarch is gluten-free?The answer is yes.

Corn is a gluten-free grain, and no other ingredients are typically required to make cornstarch.

However, cornstarch may be made in a facility that also manufactures gluten-containing foods. If so, it may be cross-contaminated with traces of gluten. In this case, a disclaimer on the label should note the factory status.

Keep in mind though, that most corn grown and harvested today is GMO, with an exception to corn kernels used for popcorn.

Preheat oven 400 degrees

Put all the ingredients except the mascarpone cheese into a sauce pan and cook for ten minutes to 15 minutes.

Remove cinnamon stick. Add mascarpone and mix until melted.

Next pour blueberry mixture into pie crust. Bake 40 minutes on mild rack in preheated oven.

Cool completely.

Serve at room temperature. Refrigerate any leftovers. Eat within 7 days.
