
Romaine lettuce is slightly bitter in taste, though not unpleasantly strong. When you bite into the lettuce leaf, you can note how robust it is with a unique fresh crispy taste that differentiates it from other lettuce.
Not very sweet tasting, and surely not as “grassy” tasting as spinach.
Each individual leaf has a thick rib through the center making romaine lettuce great for using in so many different recipes.
The cupped leaves make great edible bowls (or grab them gently like a filled taco shell) which can be stuffed with various types of food ingredients.
Salad Stuffed Romaine Lettuce Leaves
Remove 6-8 leaves from head of romaine. Trim nothing from leaf, use whole. Wash with water and dry. Set leaves aside while you make salads.
The following are the two salad recipes used to stuff the romaine lettuce leaves. Each salad should make about 4 servings each (or fill 4 lettuce leaves).
Apple, Dried Cherry and Pecan Salad

Maple Dressing
1/4 cup mayonnaise
1/4 cup pure maple syrup
3 tablespoons Champagne vinegar or other white wine vinegar
2 teaspoons sugar
1/2 cup olive oil
2 Gala apples, peeled, cored, chopped (can use honey crisp, Fiji, Granny Smith apples)
1/2 cup dried tart cherries
1/2 cup chopped pecans
Whisk mayonnaise, maple syrup, vinegar, and sugar in medium bowl to blend. Gradually whisk in oil until mixture thickens slightly. Season to taste with salt and pepper.
Toss apples, cherries, and pecans in large bowl to combine. Toss with enough dressing to coat. Divide apple cherry salad among romaine lettuce leaves equally.
You can also stuff the romaine with a Carrot Cranberry Salad.
Tuna Salad

2 – 5 oz. cans tuna in spring water
1 15 oz. can corn kernels, rinsed and drained
5 green onions, diced
1/2 cup mayonnaise
Juice from one lemon
salt and black pepper, to taste
Add tuna, corn, onions, mayonnaise and lemon juice in a medium bowl and mix well. Add salt and pepper to taste.
Divide salad equally among romaine lettuce leaves.
