Beef chuck short ribs have a lot of flavor and are tender and moist when cooked.
You can’t beat roasted tender short ribs in a honey sweet barbecue sauce. They’re slow roasted in the oven for 3 hours, with only 15 minutes of prep work.

Slow Roasted Boneless Beef Chuck Short Ribs
2.5 pounds of boneless beef short ribs
1 teaspoon kosher salt
1 teaspoon black pepper
1 cups ketchup
1 tablespoons liquid smoke
1/4 cup brown sugar
1/4 cup onion, minced
1 teaspoon garlic powder
1/3 cup Honey BBQ sauce, Find Recipe HERE, opt for your favorite
Preheat the oven to 300 degrees and place the rack in the middle.
In a medium sauce pan over medium heat, add the ketchup, liquid smoke, brown sugar, minced onion, garlic powder, honey bbq sauce and mix until combined. Cook until thick and bubbly, stirring occasionally, about 10 minutes.
Season the short ribs all over with salt and pepper. Place in a 13×9 inch glass baking dish. Pour 1/2 cup of the sauce over the short ribs.
Using tongs, flip the ribs over the sauce a few times until meat is well coated. Reserve the remaining bbq sauce to spoon over the ribs after they’re cooked. Cover the dish with foil and roast for 2 1/2 hours.
Remove the foil and gently flip the short ribs. Spoon some sauce over top of the ribs. Continue roasting uncovered for 30 minutes more or until the meat is tender and browned.
Check the ribs every 10-15 minutes to ensure that they are coated with sauce and that the dish doesn’t go dry.
Transfer the short ribs to a serving platter and baste with the reserved bbq sauce.

Plate the ribs with a side of bbq sauce for dipping and serve with a side of Creamy Mascarpone Mashed Potatoes and Southern Style Garlic Green Beans with Bacon. Or opt for your favorite side dishes.
