
The quesadilla is a regional favorite in the southwestern part of the United States, which includes Arizona and Mew Mexico among a few others states.
A southwestern style quesadilla is made using a flour tortilla that is heated on a griddle or skillet then flipped and sprinkled with cheese that are easy to melt. Such as Monterey Jack, Cheddar cheese, or Colby Jack among others.
Make This Recipe Using These Homemade Mexican Flour Tortillas
After the cheese has melted, other ingredients can be added, such as shredded meat, typically chicken, and vegetables like grilled sweet peppers, and onions. Guacamole can also be add.
The tortilla is typically folded and served as is or divide or cut into 3 sections. It can also be serve pizza style.
On one surface of a warmed flour tortilla cheese of choice is sprinkled evenly over the tortilla then a warm tortilla is placed over the cheese and is cooked to the desired crispiness. It is cut pizza style into 5 or 6 sections, plated and served.

Southwestern Style Chicken Quesadillas
2 tablespoons avocado oil
1 small or ½ medium onion, finely minced
2 cloves fresh garlic, finely minced
½ cup chicken broth
2 tablespoons taco seasoning
1 teaspoon salt
1 teaspoon pepper
2 tablespoons butter
8 10-inch flour tortillas
2 cups pre-cooked chicken, shredded (rotisserie works great)
2 cups shredded Monterey Jack or Pepper Jack cheese
1 bunch fresh cilantro, stems removed and finely chopped.
2 jalapeno peppers, seeded and diced – optional
Add the avocado oil and onion to a large cold skillet. Heat over medium-high heat until onion becomes translucent, about 6 – 8 minutes.

Add garlic and stir for 1 – 2 minutes or until it is frequent. Add chicken broth, taco seasoning and stir until dry ingredients are completely dissolved.
Next add shredded chicken and toss to coat with the seasoning. Turn heat to medium-low and simmer until any excess moisture is absorbed. Remove from heat and keep warm.

Place butter in a clean skillet and heat over medium-high heat until melted. Swirl until bottom of pan is thoroughly covered. Place one tortilla in pan.
Distribute evenly 1/2 cup seasoned shredded chicken and 1/2 cup shredded cheese. Optional to add fresh chopped cilantro and diced jalapeno peppers.

Potion a second tortilla on top. Carefully flip until tortilla turns golden brown, about 2-3 minutes.
Once both sides are browned and cheese is melted, remove from heat and cut into 8 slices.

You can your quesadilla slices with a side of Southwestern Ranch Style Beans or some fresh Homemade Mexican Salsa, or homemade Authentic Guacamole.
