Three Cheese Pesto Avocado Grilled Cheese
2 slices sourdough or whole wheat bread
unsalted butter, softened
pesto sauce – Get recipe HERE
1 slice each of Pepper Jack, Smoked Gouda and Provolone cheeses
4 thin slices of avocado
Spread a thin layer of butter on one side of the bread slices. The buttered side will be the outside of your grilled cheese sandwich.
Next, spread a thick layer of pesto on the inside of one of the bread slices making sure to get pesto all over the bread slice.
Top the pesto with Pepper Jack. Place the avocado slices on top. Top with the Gouda and Provolone cheeses. Place the other bread slice, buttered side out, on top. Press together gently.
Heat frying pan over medium low heat, and add the sandwich, cook until bread is golden brown, about 2-4 minutes.
Flip the sandwich over, and continue to cook the second side until it’s golden brown, and the cheese is nice and melted, about 2-4 minutes.
Remove sandwich from skillet and place on a plate and serve.
