One Skillet Southwestern Style BBQ Pulled Pork Black Beans & Rice

There’s nothing more awesome than a one-skillet meal. They are easy to make and easy to clean up, which makes them perfect for dinner any night of the week.

You can even have dinner on the table in a flash. This one skillet meal can be ready in 40 minutes or less.

This BBQ pulled pork with black beans, corn, rice and a bit of spice is what you can expect from a one skillet Southwestern style meal.

One Skillet Southwestern Style BBQ Pulled Pork Black Beans & Rice

With this meal you will use already cooked pulled pork and already cook rice (leftovers).

1 tablespoon oil

3/4 cup green bell pepper, chopped

1/2 cup yellow onion, chopped

2 teaspoon garlic powder

2 cups cooked long grain brown rice

2 cups water

14.5 oz can diced tomatoes with peppers, undrained

15 oz. can black beans, drained, rinsed

1 cup corn kernels (can use frozen or canned)

1 1/2 cups cooked pulled pork

3/4 cup BBQ sauce

1/2 cup shredded cheddar cheese

green onions for garnish

Heat oil in large skillet. Add onions, peppers and garlic and cook until they start to soften. Season with salt and pepper.

Next, stir in black beans, corn, tomatoes and BBQ sauce. Mix in until well incorporated.

Add the pulled pork and cooked rice to the skillet. Mix in until well incorporated.

Top with cheese and continue to cook until cheese begins to melt.

One Skillet Southwestern Style BBQ Pulled Pork Black Beans & Rice

You have the option to place skillet under broiler until cheese is bubbly and starting to brown (but do so with an oven safe skillet).

Garnish with green onions, if desired.
