
The secret to the best guacamole – Starting with a paste made with cilantro, chilli and onion made with a mortar and pestle or a molcajete as it is called in Mexico.
Then mix that paste with a little salt and mashed avocados. You can even throw in some diced tomatoes. Like with this Authentic Guacamole.
It’s the traditional Mexican way.
Lime juice is even add as it not only adds to the flavor, but also helps keep the guacamole from turning black.
A big platter of corn chips with a bowl of guacamole is certainly the most classic!

Nachos Served With Guacamole
But you can also use your guacamole as a dip or dollop for burritos, enchiladas, tacos, fajitas and nachos – Authentic Mexican Nachos.
Easy and fast to make. If you don’t have a mortar and pestle, use the back of a fork to make the paste.
Making Fresh Guacamole With A Molcajete
2 tablespoons finely chopped white onion – option to use the white parts of 3 scallions)
1 tablespoon finely chopped jalapeño or serrano chilli (or other Chili of choice)
1/2 teaspoon salt, more to taste
1/4 cup roughly chopped cilantro leaves
2 medium avocados, pitted and meat scooped from skin
Lime juice, to taste, start with a 1/4 teaspoon ( if no limes you can use white wine vinegar, starting with 1/4 teaspoon)
Optional: 1 ripe tomato, peeled, deseeded and chopped
Place the prechopped onion, jalapeño, half of the cilantro in a mortar and pestle or Molcajete.

Take the pestle in hand and apply pressure and mash and grind ingredients into a paste.

Scrape paste into a bowl, add avocado and remaining coriander leaves and mash to desired consistency.

Do a taste test then adjust to your taste: by adding salt and lime juice. Plate and serve with corn chips or your favorite Mexican food.
