Ingredients

4 – 8-10 inch round flour tortillas 

3 cups pulled pork, cooked 

1/3 cup cilantro, chopped

1/2 cup yellow onion, chopped

3-4 cups cheddar cheese, shredded – can also opt for pepper jack or sharp cheddar 

1/2 cup bbq sauce, your favorite 

Instructions

Place a nonstick skillet over medium-high heat with 1 teaspoon of avocado oil. When is warm place pulled pork meat into skillet.

Stir meat until warmed through. Be careful not to cook meat more than it already is. Just stir meat in heated oil to warm it.

Remove meat once warm to a medium bowl. In the same skillet add the bbq sauce to warm it and pour it over meat and mix in thoroughly.

Add chopped cilantro and onions and combine. Set meat mixture aside.

Next warm on medium heat a 9.5 inch nonstick skillet. Place a tortilla in skillet flipping a few times to warm tortilla through.

Next spread evenly 1/2 to 1 cup cheese over surface of tortilla. Spread evenly on one side of tortilla meat mixture then pull the other half of tortilla over meat. Cook until cheese has melted than fillip quesadilla to other side and cook until cheese has melted. Remove to a plate. 

Do the same above instructions with the remaining tortillas.

Creamy Chipotle Sauce

½ cup whole milk Greek yogurt

¼ cup mayonnaise

1 chipotle pepper from a can of chipotles in adobo sauce, seeds removed

1 garlic clove, peeled

1 teaspoon lime juice or white wine vinegar 

1 teaspoon extra-virgin olive oil

1 teaspoon honey or maple syrup

Salt and black pepper, to taste 

In a food processor, place the yogurt, mayo, chipotle pepper, garlic, lime juice, olive oil, honey, and blend until smooth. Season to taste with salt and pepper.



Plate quesadillas with chipotle sauce and enjoy.
