8 ounces gluten-free penne pasta
2 tablespoons unsalted butter
1/2 teaspoon salt
1 12-ounce can condensed milk
2 cups Mexican cheese mix
1 15-ounce can corn
8 thick cut strips smoked bacon, stacked and cut diagonally 4-5 times
1 medium Anaheim or Hatch chili, seeded, deveined, diced

Heat a medium skillet over medium heat. Add chopped bacon snd cook just until starting to crisp.
Remove from heat and spoon cooked bacon and fat to a plate and set aside.
Cook pasta according to package instructions.
While pasta cooks, prepare chili. Set aside.
When pasta is done, add cheese, condensed milk and mix in.
Next add corn, bacon and chilies. Mix in to combine.
