Mexican Chorizo With Eggs

Mexican chorizo is a pork sausage that is intensely-flavored. It is a favorite breakfast food in Mexico and areas of the United States with a Mexican population.

Mexican chorizo is not to be confused with Spanish chorizo.

Chorizo from Mexico is purchased raw and uncooked, as shown in the image below.



Where as Spanish Chorizo is purchased cured and cooked. It’s consistency is similar to summer sausage. Like this Tortellini & Summer Sausage With Tomato Basil Vinaigrette.

Mexican Chorizo is versatile. Not only can you cook it with eggs, you can also cook it with potatoes. Like with this Mexican Chorizo & Fried Potatoes – Mexican Chorizo y Papas Fritas.

Mexican Chorizo With Eggs

9 ounces Mexican pork chorizo

4 eggs

Fresh Mexican cheese and chopped cilantro for garnishing

Heat a large skillet over medium high heat. Add 1 tablespoon avocado oil. When oil is shimmying add chorizo.

With a wooden spatula, break chorizo up and spread evenly over surface of skillet.

Let cook while moisture from meat evaporates, stirring occasionally. Once moisture has cooked off (about 5-7 minutes), continue to cook meat, again stirring occasionally, just until chorizo starts to crisp.



Next, pour whisked eggs evenly over cooked chorizo. Let stand 1 minute before scrambling.



After scrambling eggs with meat thoroughly, remove from heat and plate. Serve with some crumbled Queso Fresco or fresh Mexican cheese and chopped cilantro.
