Sautéed Potatoes with Mexican Chorizo & Cheddar Cheese
1 pound Mexican chorizo, casings removed *See Cook’s Notes
1/2 pound mini potatoes, with skin on, diced
1 1/2 cup cheddar cheese, shredded
2 tablespoon butter, unsalted, divided
3 garlic cloves, peeled, mashed
1/4 cup cilantro, chopped for garnishing

Mexican chorizo is an uncooked sausage, made with fresh ground pork and seasoned with smoked red chiles.
Since it’s fresh, you will need to remove the casing before cooking it. They can be found at most supermarkets.
Chorizo makes s great filling for soft tacos, like these Mexican Chorizo & Egg Tacos.
Place rack 6 inches below broiler and turn broil on high.
In a oven proof skillet over medium heat add butter, when melted and slightly sizzling, add mashed garlic and sauté until fragrant. Next add diced potatoes. Place a lid on the pan.
After about 5 minutes remove lid and stir potatoes and replace lid. Repeat until the potatoes are cooked crispy brown but tender.
Remove cooked potatoes to a plate and set aside.
In the same add 1 tablespoon butter and chorizo. Cook stirring occasionally until moisture from pan has evaporated and meat is fully cooked. Remove meat with a slotted spoon and place on a napkin line plate to soak up grease.

Remove any remaining fat from skillet. Return potatoes and chorizo to skillet and mix together. Top mixture with cheese and place under broiler until cheese has melted.

Plate and garnish with chopped cilantro (optional).
