Gnocchi With Pesto, Smoked Bacon And Roasted Golden Beets
1 pound potato gnocchi, cooked according to package instructions
1 1/4 cup pesto sauce – find recipe HERE
2 small golden beets, peeled and diced 1/4-inch pieces (about 1 cup)
1 tablespoon olive oil
7 strips smoked bacon, chopped
Salt and pepper to taste
Roast The Golden Beets
Preheat your oven to 400 degrees
Toss the diced golden beets with olive oil, salt, and pepper.
Spread them on a baking sheet in a single layer and roast for about 25-30 minutes, or until tender and slightly caramelized. Stir halfway through for even cooking.
Cook The Bacon
In a large skillet over medium heat, add the chopped hickory smoked bacon.
Cook until just crispy, about 5-7 minutes. Remove the bacon from the skillet and place it on a paper towel to drain excess fat. Leave a little grease (about 2 tablespoon) in the pan for flavor.
Add the roasted golden beets and cooked bacon to the skillet with the gnocchi. Add the pesto and gently toss everything together until well coated. Cook for another 1-2 minutes until warmed through.
