Mexican Squash Pasta With Chorizo Meat Sauce

Following a gluten-free diet doesn’t have to be restrictive, in fact it can be absolutely delicious.
This chorizo and zucchini squash checks all the boxes.
A sweet tomato based spaghetti sauce with a Mexican squash made into vegetable style pasta.
What Is Mexican Squash
Mexican squash can vary in color, though they are typically a deep and vibrant green with darker vertical stripes.

Mexican squash is a vegetable of the gourd family and its dishes and recipes are, without a doubt, palatable and savoury. It can be eaten either as a main dish or can be served as a side dish.
Mexican Squash Pasta With Chorizo Meat Sauce
16 oz. Tomato based pasta sauce
1 pound Mexican-style chorizo
3 small Mexican squash, peeled
Use a vegetable peeler or a julienne peeler to cut long strips down one side of one squash until you reach the seeds.
Turn squash and repeat on three remaining sides. Repeat with remaining squash. Discard zucchini cores.
Place a large nonstick skillet over medium heat, when skillet is heated add the pork, and cook until fat has rendered, about 10 minutes. remove from heat, and set aside.
In a large nonstick skillet over medium heat, add 4 tablespoons of olive oil. When heated, add the stringed squash and cook for about 5 minutes.

You want the oil to cling to the squash strings. If the oil clings then in turn the spaghetti sauce will cling to the squash pasta.
Do not over cook the squash, you want a little crunch, and at the same time you want a fork to twirl it, the same as is done with traditional pasta.
Remove skillet from heat and transfer squash past to a serving platter. Return the skillet to the heat and add the spaghetti sauce and cooked pork chorizo, and mix together. Allow heat to warm the sauce and chorizo.

Remove meat sauce from heat and pour it over the squash pasta arranged on a serving platter. Serve with grated Italian cheese, and enjoy.
