Scrambled eggs typically are mixed with cream or milk and salt and pepper for taste. Then they are poured into a skillet with some butter or olive oil and are moved about in the pan with a spatula until cooked.

But a scrambled omelet is eggs cooked with other ingredients. Such as cooked bacon, bell peppers, cheese, onions and just about any ingredient that suits you.

So if making an omelet that looks like an omelet is too hard for you to make, then scramble it. Yes, it is quicker, but just as tasty.

Scrambled Omelet With Sweet Aji Peppers & Sun-Dried Tomatoes

4-5 medium eggs, beaten

2 tablespoons heavy cream

1/2 green bell pepper, diced (can also use any other color of bell pepper)

3 sweet Aji peppers, seeds removed

1/3 cup sun-dried tomatoes, chopped

1/4 cup diced shallots (can sub for a white sweet onion)

Beat eggs in a medium bowl and mix in cream. Set aside.

Prepare vegetables. Set aside.

Place a medium skillet over burner set to medium-high. Add a tablespoon of butter and melt.

Next add shallot’s and sauté 1 minute. Next add peppers and sauté another 2-3 minutes.

Next pour prepared eggs evenly over vegetable mix. Next place chopped sun-dried tomatoes over egg mixture evenly.

Allow eggs to cook 2-3 minutes without disturbing them. Next, start to move egg mixture making sure vegetables are evenly cooked throughout the eggs.

Cook eggs to desired texture – soft, medium or hard scrambled.
