Orecchiette With Andouille Sausage & Pesto Chipotle Sauce

Orecchiette with Andouille Sausage and Pesto Chipotle Sauce

Smoky Andouille sausage, tender orecchiette pasta, and basil pesto with a spicy chipotle twist come together in a satisfying weeknight dinner.

Fresh green beans add a little crunch, while sweet cherry tomatoes balance the smoky heat with bursts of freshness.

What makes this pasta dish especially interesting is the combination of flavors.

Andouille sausage brings its distinctive smoky seasoning, while chipotle peppers in adobo deepen the flavor of the basil pesto. The basil adds an herbal freshness that keeps the sauce from becoming too heavy or overpowering.

Everything comes together in under 30 minutes, making this a great choice when you want a hearty pasta dinner without spending the evening in the kitchen.

What Is Orecchiette?

Orecchiette is a traditional pasta from Puglia, a region in Southern Italy. Its name translates to little ears, describing the small, rounded shape with a slightly hollow center.

Unlike long pasta shapes such as spaghetti or linguine, orecchiette has a shallow, cup-like shape that catches small pieces of sausage, vegetables, and sauce.

The thinner centers become tender during cooking, while the slightly thicker edges provide a pleasantly firm bite.

Orecchiette Pasta – Left has Ridges and Right has a Smooth Surface

That makes orecchiette particularly well suited for this recipe. The little pasta cups collect the smoky chipotle pesto, while pieces of Andouille sausage, green beans, and cherry tomatoes settle naturally among them.

Every forkful brings a different combination of flavors and textures.

What Is Andouille Sausage?

Andouille sausage is a smoked pork sausage best known for its place in Louisiana’s Cajun and Creole cooking traditions.

Although its origins trace back to France, Louisiana-style Andouille has developed its own distinctive character. It’s seasoned with garlic, black pepper, and other spices, then smoked to develop its rich flavor.

Unlike milder smoked sausages, Andouille has a coarser texture and more pronounced seasoning. When sliced and browned in a skillet, the edges develop a flavorful crust while the inside remains juicy and tender.

Can You Substitute Another Sausage?

If Andouille isn’t available, smoked kielbasa or another fully cooked smoked pork sausage can work.

However, these sausages are generally milder, so the finished dish won’t have quite the same peppery, smoky character that Andouille brings to the pasta.

What Is Chipotle?

Chipotle is a ripe jalapeño pepper that has been dried and smoked, transforming its fresh, grassy flavor into something deeper, earthier, and distinctly smoky.

Originating in Mexico, chipotle peppers provide moderate heat with a subtle sweetness that makes them particularly useful in sauces, marinades, soups, and meat dishes.

Unlike fresh jalapeños, chipotle peppers contribute more than heat. Their smoky character adds depth and complexity, making them especially useful when pairing ingredients with contrasting flavors.

Great for leftovers: The pasta reheats well, making it a convenient option for lunch the following day.

Why These Flavors Work Together

What makes this orecchiette pasta dish work is the balance between smoky, spicy, herbal, and fresh ingredients. Each one contributes something different, so no single flavor overwhelms the others.

The Andouille sausage provides a savory, smoky foundation, while the chipotle peppers add a deeper, earthy heat. Although both ingredients bring smokiness, they contribute different layers of flavor rather than simply making the dish spicier.

Basil pesto brings garlic, herbs, and richness that soften the intensity of the sausage and chipotle. The tomatoes add a little acidity, helping balance those richer flavors, while the green beans provide freshness and a slightly crisp texture.

Even the orecchiette plays a role. Its small, cup-shaped pasta catches the pesto and bits of sausage, bringing those flavors together in every bite.

Without the pesto, the dish would lose much of its herbal character.

Without the tomatoes and green beans, it would feel heavier.

And without the Andouille and chipotle, it wouldn’t have the smoky depth that makes this recipe distinctive.

Toasted Sourdough Garlic Cheese Bread

The crisp, golden sourdough topped with melted cheese and savory garlic makes a delicious accompaniment to the smoky Andouille sausage and chipotle pesto.

It’s also perfect for soaking up any extra pesto sauce left on your plate.

Store and Reheat Leftovers

Store leftover pasta in an airtight container in the refrigerator for up to 3–4 days.

Reheat gently in a skillet over medium-low heat with a splash of water to loosen the pesto sauce. Stir occasionally until heated throughout, avoiding prolonged high heat that can dull the fresh basil flavor.

Frequently Asked Questions

Can I use a different pasta shape?

Yes. If orecchiette is unavailable, substitutes like conchiglie (shells), campanelle, or rigatoni work well because their shapes are also excellent at catching chunky ingredients and thick sauces.

Can I make this dish vegetarian?

Absolutely. You can replace the Andouille sausage with a plant-based spicy sausage link, or swap the meat entirely for roasted chickpeas or cannellini beans to maintain the protein.

Can I use frozen green beans instead of fresh?

Fresh green beans are highly recommended for the best crisp-tender texture. If using frozen cut green beans, add them to the boiling pasta water for only the final 1 to 2 minutes of cooking so they do not become mushy.
