This recipe is a compete meal that’s so delicious that you may be tempted to eat it straight from the skillet.
Juicy tender chicken breast together with pillowy soft gnocchi smothered in a luscious cream sauce with spinach mixed in.

A Creamy Sauce Without Cream
How’s that you ask, a creamy sauce without cream. That’s right.
Instead of using heavy cream, you use whole milk. The gnocchi is simmered in the milk, and as it cooks, it releases starch. In turn, the starch thickens the milk converting it into a delicious cream sauce.

This recipe is fast and easy. The clean-up is also minimized as there is only one skillet to clean.
Creamy Chicken and Gnocchi Skillet
1 large shallot, minced
2 cups baby spinach, packed (about 2 ounces), coarsely chopped – you can do this using your food processor

3 large or 4 medium chicken breasts, boneless, skinless
1 teaspoon Himalayan salt, divided
1/2 teaspoon black pepper, divided
2 tablespoons olive oil
2 cups whole milk
1 pound gnocchi, fresh, shelf-stable, or frozen
2 tablespoons chopped fresh parsley, garnish (optional)
Pound the boneless, skinless chicken breasts one at a time: Place 1 chicken breast in a gallon-sized zip-top bag and pound with a rolling pin or the flat side of a meat mallet to an even 1/2-inch thickness. Pat dry with paper towels and season with 1/2 teaspoon salt and 1/4 teaspoon black pepper.
Heat 2 tablespoons olive oil in a large skillet over medium-high heat until shimmering. Working in batches, add the chicken and sear until deeply browned, 5 to 7 minutes per side. Transfer the chicken to a plate.
Add the shallot to the skillet and sauté until softened, about 1 minute. Add 2 cups whole milk, gnocchi, and the remaining 1/2 teaspoon salt, and 1/4 teaspoon black pepper.

Bring to a rapid simmer and cook, stirring frequently, until the milk is reduced slightly and thickened, about 2 minutes.
Stir in the coarsely chopped spinach and nestle the cooked chicken on top.

Continue to simmer until most of the liquid is absorbed and forms a creamy texture and the chicken is cooked through, about 2 to 3 minutes.

Plate and garnish with chopped parsley (optional).
