Blueberry Lemon Buckwheat Pancakes

These Lemon Blueberry Buckwheat Pancakes will not only satisfy your hunger, but will surely be a real festive treat to your taste buds.

What Is Buckwheat

Despite the name, buckwheat is not a type of wheat. Instead, it’s a pseudo-grain or seed and is related to rhubarb.



Even though buckwheat is not an actual grain like wheat, it does however, act as a (gluten-free) grain from a culinary perspective.

Though this recipe calls for one half cup of flour, you can substitute it for buckwheat, and therefore, make this a gluten-free pancake breakfast.

Blueberry Lemon Buckwheat Pancakes

1/2 cup buckwheat flour

1/2 cup all–purpose flour

1 teaspoon baking powder

2 tablespoons sugar 

1 teaspoon salt

1/4 cup unsalted butter, melted

1 cup buttermilk 

2 eggs

1 teaspoon vanilla extract

Zest from one lemon

1 1/2 cups fresh blueberries, can sub for frozen, thaw before using

Add lemon zest with sugar to a small bowl. With clean fingers, message zest and sugar together to release lemon oil into sugar. Set aside.

In a large bowl, whisk together the buttermilk, eggs, butter and vanilla. Set aside.

In a smaller bowl, add blueberries, sugar- zest mixture and all other dry ingredients. Stir until combined.

Pour the small bowl ingredients into the buttermilk mixture and mix until just combined. Let sit for about five minutes.

Place a large nonstick skillet over medium heat. When heated add 1 tablespoon butter.

When melted, pour 1/3 cup pancake batter over sizzling butter. Cook about 3 minutes then flip and continue cooking another 3 minutes. Remove from heat to a warm plate.

Repeat until all batter is used. Should cook up 4 servings (about 3, 5-inch round pancakes per serving).



Plate and serve with maple syrup. If desired, top with more blueberries and lemon zest.
