Fresh Tomato Basil Vinaigrette

This Tomato Basil Vinaigrette is a salad dressing that makes an ideal use of fresh tomatoes.
It’s a delicious salad dressing with a fresh from the garden flavor.
It’s really easy to make and is great poured over a fresh leafy green salad or mixed with a pasta dish. Like this Cheese Tortellini & Summer Sausage.

You can also pour the Tomato Basil Vinaigrette over mozzarella cheese balls. It’s almost like having a Caprese Salad.

Mozzarella Cheese Balls Soaking In A Tomato Basil Vinaigrette
Use the vinaigrette as a dipping sauce for your fried mozzarella cheese sticks. Like these Herb Panko Mozzarella Cheese Sticks.
This vinaigrette can also be used as a marinade for grilled chicken.

Tomato Basil Vinaigrette
1 cup chopped seeded plum tomatoes
1 cup packed fresh basil leaves, coarsely chopped
1/4 cup red wine vinegar
2 tablespoons balsamic vinegar
1 tablespoon Dijon mustard
2 garlic cloves
1/2 cup olive oil
Place first 6 ingredients in a processor or blender. With machine running, add olive oil and continue processing until well blended. Season to taste with salt and pepper.

Cover and refrigerate. Use within 5-6 days. Make 1 1/2 cup vinaigrette. Before using, bring to room temperature.
