Shaved Fennel, Apple, and Arugula Salad with Honey-Ginger Dressing

Mention salad, and iceberg or romaine lettuce might be the first thing that comes to mind. But a salad can take many forms, with shaved vegetables, fresh fruit and a handful of greens bringing something different to the table.
Thinly shaved fennel, sweet Honeycrisp apple and peppery arugula come together in this crisp, refreshing salad.
A honey-ginger dressing adds sweetness and a little warmth, while toasted pecans give each bite a buttery crunch.
Why You’ll Love This Recipe
Simple preparation: No cooking is needed when you have toasted pecans ready.
Easy to prepare ahead: Make the dressing and prepare the fennel in advance, then slice the apple and assemble just before serving.
Works for different occasions: Serve it alongside a weeknight dinner or as a fresh side for your holiday table.
How the Flavors and Textures Work Together
Peppery arugula and the mild anise flavor of shaved fennel give this salad a fresh, slightly sharp base. Honeycrisp apple adds juicy sweetness and a little tartness to balance them.
The dressing brings those flavors together. Fresh ginger adds warmth and a zesty bite, while honey softens the acidity of the apple cider vinegar.
The dressing tastes a little different with each bite. Against the sweet apple, the ginger is more subtle. With the peppery arugula, its warm, zesty flavor comes through more clearly.
Dijon mustard helps the oil and vinegar blend so the dressing coats the salad evenly.
Toasted pecans add a buttery, nutty finish. Their crunch contrasts with the tender arugula and complements the crisp apple and fennel.

Blood Orange Fennel and Mint Salad
Fennel also pairs well with citrus. Try this Blood Orange Fennel and Mint Salad for a combination of juicy oranges, crisp fennel and fresh mint.
Choosing and Preparing Fresh Fennel
Look for a firm fennel bulb that feels heavy for its size, with white or pale-green layers. Avoid bulbs with soft spots or heavy brown bruising. If the stalks and feathery fronds are attached, they should look fresh rather than wilted.
Cut off the stalks where they meet the bulb, saving a few fronds for a garnish if you like. Trim a thin slice from the root end and remove any tough or damaged outer layer.
Cut the bulb lengthwise into quarters. Rinse between the layers to remove trapped dirt, then trim out the firm core at the base of each quarter. Use a sharp knife or mandoline to shave the fennel thinly.
For this recipe, you’ll use half of a medium-to-large bulb. Soak the shaved fennel in ice water for 10–15 minutes to help it become crisp, then drain and dry it thoroughly.

Combine the honey, apple cider vinegar, olive oil, grated ginger, Dijon mustard and salt in a small bowl or jar. Whisk well, or secure the lid and shake until combined.
Place the arugula, sliced Honeycrisp apple and dried fennel in a large salad bowl.
Pour about ⅓ cup of dressing over the salad. Toss gently to coat. Taste and add more dressing only as needed.
Scatter the toasted, chopped pecans over the salad and serve immediately.

Storing Leftovers
This salad is best eaten soon after dressing, while the arugula and apple are crisp. Refrigerate any leftovers promptly in an airtight container, keeping in mind that the dressed greens will soften.
For advance preparation, refrigerate the prepared fennel and arugula separately and keep the toasted pecans in their own container. Slice the apple just before assembling.
Store the dressing in a sealed jar in the refrigerator. If the olive oil thickens when chilled, let the jar stand at room temperature briefly, then shake well before using.
Frequently Asked Questions
Can I use a different apple?
Yes. Honeycrisp is especially good here for its honey-sweet flavor and crisp texture. Fuji or Gala can also work, while Granny Smith will give the salad a more tart flavor.
Do I need a mandoline?
No. A sharp chef’s knife works well. Take your time and slice the fennel as thinly as you can. If using a mandoline, use its hand guard.
What does raw fennel taste like?
Raw fennel has a mild, sweet anise or licorice-like flavor and a crisp texture. Shaving it thinly helps distribute that flavor throughout the salad.
Can I make this salad vegan?
Yes. Replace the honey with an equal amount of pure maple syrup or agave nectar. Maple syrup will give the dressing a different flavor.
Can I grate the ginger while it is frozen?
Yes. Grate it directly from frozen with a fine grater or Microplane, then measure out 1 tablespoon for the dressing.
