One Skillet Creamy Gnocchi With Italian Sausage & Kale

This Creamy Gnocchi With Italian Sausage & Kale is comfort food at its best. Cooked in one skillet and it’s easiest to prepare and very delicious, flavorful and did we say yummy!

Gnocchi is made from potatoes, flour, and eggs. They are actually little Italian dumplings.

If cooked properly, gnocchi has a soft texture that melts in your mouth while still being firm enough for easy chewing.

This is a seriously satisfying plate of pure comfort food.

One Skillet Creamy Gnocchi With Italian Sausage & Kale

1 pound mild Italian sausage

1 1/2 teaspoons olive oil

1/2 cup finely chopped yellow onion

2 teaspoons minced garlic

3/4 cup chicken broth, optional to use vegetable broth

3/4 cup milk

6 ounces (about 4 cups lightly packed) kale, ribs removed, chopped

1-16 ounce package potato gnocchi

Freshly ground black pepper

1/3 cup heavy cream

1/3 cup shredded parmesan cheese, plus more for serving if desired

Heat oil in a non-stick 12-inch skillet over medium-high heat. Crumble sausage into skillet. Use a spatula to break up large chunks, tossing occasionally, until browned and cooked through, about 6 – 7 minutes. 

Transfer sausage to a plate lined with paper towels while leaving 2 teaspoons of oil in skillet (discard any remaining oil). Set sausage aside. 

Return skillet to stove top. Reduce heat to medium. Add onion to skillet and saute 4 minutes, or until softened, then add garlic and saute 30 seconds. 

Pour in chicken broth and milk; bring to a simmer. Add chopped kale, cover skillet and let steam 2 minutes, or until wilted.

Add in gnocchi, toss to coat, season with pepper to taste. Cover and cook until tender and most of the liquid has been absorbed, about 4 – 5 minutes.


One Skillet Creamy Gnocchi With Italian Sausage & Kale


Add in cream, parmesan and cooked sausage and toss. Serve warm with more parmesan if desired.
