1 cup avocado oil
1 large egg, at room temperature
1 tablespoon lemon juice
1 teaspoon Dijon mustard
1/2 teaspoon salt
Use a tall, narrow container for blending. A mason jar is perfect for this, as it allows you to store the mayo in the same jar.
Add the egg, lemon juice, Dijon mustard, and salt to the container. Carefully pour the avocado oil on top.
Using a handheld immersion blender, place it at the bottom of the container. Turn it on and hold it steady for about 10 seconds until the mixture starts to emulsify.
Slowly move the blender up through the mixture until all the oil is incorporated and the mayonnaise is thick and creamy. This should take about 30 seconds to a minute.
Taste your mayonnaise and adjust the seasoning if necessary. You can add more salt, lemon juice, or even a touch of garlic for extra flavor.
Seal the jar with a lid and store in the refrigerator for up to one week.
