Peach & Shaved Fennel Salad

This sweet and crunchy salad is deliciously yummy with with a protein dish like pork or chicken.

Fennel resembles onions or leeks but tastes and smells like licorice and anise. It’s green top also resembles dill.

Fennel has a sort of sweet, smoky flavor with a bit of spice. When uncooked, it has a wonderful crunchy texture.

To soften the fennel slightly, briefly marinate it with the vinegar and salt before tossing it with the slices of firm sweet peaches.

Peach & Shaved Fennel Salad

2 fennel bulbs—halved, cored and very thinly sliced on a mandolin or slicing side of a box grater

2 tablespoons Riesling vinegar or white balsamic vinegar (optional to use white wine vinegar)

3/4 teaspoon Himalayan salt, or to taste

2 medium size peaches, thinly sliced

2 tablespoons or 1/8 cup packed flat-leaf parsley leaves, without stems

1 tablespoon small tarragon leaves

Finely grated zest of 1 lemon


Cook’s Notes

After zesting the lemon skin, squeeze the juice and add it to 3-4 cups water – about 1 tablespoon sugar and make yourself some lemonade.

Forking some Peach & Shaved Fennel Salad with a plate of below

In a large serving bowl, drizzle the fennel with the vinegar. Season lightly with salt and let stand, tossing occasionally, until slightly soften, about 20 minutes.

Next add the peaches, parsley, tarragon and lemon zest and toss well. Season with salt and pepper to taste.
