Peach and Burrata Crostini with Pomegranate Molasses and Pistachios
For the Crostini
1 French baguette (or ciabatta loaf)
3-4 tablespoons olive oil
Salt to taste
For the Topping
2 ripe peaches, sliced
1 ball of burrata cheese (about 8 oz)
1/4 cup fresh basil leaves, chopped
1/4 cup pistachios, chopped
Pomegranate molasses, for drizzling
Preheat your oven to 375 degrees
Slice the baguette into ½ inch thick pieces.
Arrange the slices on a baking sheet, brush with olive oil, and sprinkle lightly with salt.
Bake in preheated oven 8-10 minutes or until golden brown and crispy.
While the crostini are baking, wash, and slice the peaches.
Tear or slice the burrata cheese.
