Mediterranean Sun-Dried Tomato Spread

To make this delicious spread, you only need a handful of ingredients, many of which are commonly used in Mediterranean cooking.



1 cup sun-dried tomatoes in oil, drained, reserve oil

1/4 cup cream cheese, room temperature

1 clove garlic, minced

2 tablespoons fresh basil, chopped

Salt and pepper, to taste

1/2 to 1 tablespoon distilled vinegar (used to add a tangy note to brighten the flavors)

In a food processor, combine the sun-dried tomatoes, cream cheese, garlic, and basil. Blend until smooth. If the mixture is too thick, add reserved sun-dried tomato oil (1 teaspoon at a time) for desired consistency.

Add salt, pepper, and vinegar to the mixture. Blend again, tasting as you go to achieve the perfect balance.
