
This one-skillet smoked sausage and sweet potato is a perfect weeknight dinner.
This one skillet meal is delicious as well as nutritious. Sweet potatoes are quickly sautéed then paired with savory sausage, onions, red pepper flakes, Italian seasoning and sweet bell peppers for a sweet spicy and savory touch.
The sausage used in this recipe is a Portuguese smoked sausage called linguica. Its popularity compares with that of pepperoni in the United States.

The sausage is made from pork and seasoned with onion, garlic and paprika including other spices.
It is prepared similar to Spanish sausage in that it undergoes a curing and preservation process through smoking. Therefore, it is packaged cooked. Though you can buy it raw.

One Skillet Smoked Portuguese Sausage With Sweet Potato & Peppers
1 1/2 pounds sweet potatoes, peeled and petite diced
1 onion, minced
1/2 red bell pepper, diced
1/2 green bell pepper, diced
1 package smoked Portuguese sausage, sliced
4 tablespoons olive oil, divided
2 teaspoons Italian seasoning
1/2 teaspoon red chili pepper flakes, or to taste
1/2 teaspoon minced garlic
1/4 cup chicken stock – Find Recipe Here
1 teaspoon Sriracha hot sauce
4 green scallion, chopped
Salt and fresh cracked pepper
Chopped parsley, for garnish
In a large cast-iron skillet, heat 3 tablespoons olive oil over medium heat. Add the diced sweet potatoes to the pan and season with salt and pepper. Saute until golden and cooked through, about 7-10 minutes, stirring regularly. Transfer sweet potatoes to a plate and set aside.
In the same skillet with the remaining tablespoon olive oil, over medium heat, brown the sliced smoked sausage on all sides for, about 4-6 minutes. Transfer meat to a plate and set aside.
Add bell pepper and stir-fry until crisp-tender, about 2 minutes. Set aside.
Again in the same skillet, add garlic, onion, and season with red pepper flakes, Italian seasoning, salt, and pepper. Cook stirring occasionally until onions are translucent then deglaze skillet with 1/4 cup chicken stock, then stir in the hot sauce.

Add back to the skillet the cooked sweet potatoes, bell peppers, sausage along with the chopped scallions and mix everything together. Cook for 2 to 3 minutes more, stirring well to coat the smoked sausage and veggies with the sauce.
Adjust seasoning if needed, garnish with chopped fresh parsley. Plate and serve.
