One Skillet Creamy Parmesan Dijon Chicken

One Skillet Creamy Parmesan Dijon Chicken

4 tablespoons avocado oil

1 3/4 pounds boneless skinless chicken breasts, about 3 medium breasts

2 teaspoons Italian seasoning

1/2-3/4 teaspoon salt, or to taste

3/4 teaspoon ground black pepper, or to taste

1/2 cup dry white wine, can sub for chicken or vegetable broth

4 cloves garlic, minced

1 cup heavy cream, can sub for half-and-half

1/4 cup Dijon mustard

3/4 cup Parmesan cheese, grated, divided

2 teaspoons fresh parsley, or 1 teaspoon dried parsley, optional for garnishing

Remove any excess fat from the chicken breasts. Cut each breast, horizontally. Then cut each piece diagonally. Season each side with the Italian seasoning, salt and black pepper,

Place a large stainless steel skillet (about 10-inches) with the oil over medium high heat. Heat the oil, then add the seasoned chicken breasts pieces.

Sear the meat for about 5-7 minutes on each side, depending on the thickness.

Take care to not touch, move, or disturb the chicken while it is searing.

When chicken is cooked, remove the pieces with a slotted spatula and place it on a plate to rest.

The chicken pieces should have a medium golden brown color.

Turn the heat to medium low, and using caution, add the wine to skillet to deglaze it. Allow the liquid to bubble up and steam violently for a few seconds.

Next add the garlic and cook for 1 minute, stirring continuously.

Add the heavy cream, Dijon mustard, and whisk to combine.

Add 1/2 cup of the Parmesan cheese to the skillet and stir to combine until cheese has melted.



Turn the heat off, add the chicken back into the skillet and spoon the sauce over the chicken.

Evenly sprinkle the remaining 1/4 cup Parmesan cheese over the chicken.

Sprinkle parsley evenly over meat (optional) and serve.
