Crispy Korean Style BBQ Brussels sprouts

Brussels sprouts are a hearty vegetable that can be prepared in a number of ways, and this Crispy Korean Style BBQ Brussels sprouts is one of them.
Roasting Brussels sprouts brings out great flavor and softens what is a firm, tightly wrapped leafy green.
After their roasted their dressed with a sweet, spicy and savory sauce.

Crispy Korean Style BBQ Brussels sprouts
1 lb. Brussels sprouts, trimmed and halved
1 tablespoon butter avocado oil
salt to taste
For The Sauce
1/2 tablespoon avocado oil (can opt for olive oil)
1 teaspoon fresh grated ginger
1 teaspoon fresh garlic, minced (about to cloves)
2 tablespoons BBQ sauce
1 tablespoon soy sauce
1/2 tablespoon rice vinegar
pinch of red pepper flakes, optional
salt to taste
1 teaspoon sesame seeds, garnishing, optional
Preheat oven to 400 degrees
Add Brussels sprouts to a large bowl with oil and salt, mix to combine.
Arrange Brussels sprouts on a foil lined baking sheet in a single layer. Bake in preheated oven for 18-22 minutes, or until they are lightly crisped. Toss them half way.
While Brussels sprouts are cooking – prepare sauce.
In a small mixing bowl combine BBQ sauce, soy sauce, rice vinegar, salt and Korean style red pepper (if using) and mix.
In a small sauce pan over medium heat add the oil.
Once heated add the grated ginger and let cook for about 1 minute, stirring frequently, take care not to burn.
Add sauce mixture to the sauce pan.
Reduce heat to low and let the sauce thicken for 4-5 minutes, whisking occasionally. It should reduce by half.

Add sauce to a 10 inch oven proof skillet. Remove roasted Brussels sprouts from oven and add to skillet. Mix with sauce until combined.
Place pan in oven in heated oven for 2-3 minutes.

Top with sesame seeds if desired. Serve with a salad and protein like chicken or fish and enjoy.
