Asian Salad with Sesame Ginger Dressing
2 medium rainbow carrots (one purple – one yellow), grated
1 red pepper, diced
2 stalks celery, diced
¼ medium red onion, diced
¼ cup cilantro, chopped
2 tablespoons toasted sesame seeds
¼ cup roasted cashews
The Dressing
2 tablespoons sesame oil
1 tablespoon lemon juice
1 tablespoon honey
2 teaspoons soy sauce
1 teaspoon grated ginger
1 small garlic clove, grated
pinch of sea salt
Combine all the dressing ingredients in a small bowl and whisk together.
Add the prepared produce to a medium-sized bowl. Pour dressing and toss to coat.
