Bacon Charred Brussels Sprouts With Parmesan
1 pound Brussels sprouts
7 slices thick cut bacon, cut into 1/2 inch pieces
4 cloves garlic, peeled, cut in half diagonally
1/2 cup grated Parmesan cheese
1 tablespoon butter
Warm a large cast iron skillet over medium high heat. Add chopped bacon and cook just until crispy. Plate cooked bacon and set aside.
Remove all but 1 tablespoon bacon fat from skillet. Return skillet to heat source, add 1 tablespoon butter. When melted and sizzling add chopped garlic and move about in fat for 30 seconds or until you smell the aroma of garlic.

Next add quartered Brussels sprouts to the skillet, and spread out evenly over surface of skillet. Continue cooking 3-4 minutes, without stirring, until they start to brown and char.
Stir the Brussels sprouts and continue cooking for an additional 3-4 minutes. Add the cooked bacon to the Brussels sprouts and mix in. Continue cooking for another 2-3 minutes, until the Brussels sprouts are just tender.

Next, sprinkle cheese evenly over top. Place skillet under broil for about 2 minutes, or just until you get a golden char on the parmesan cheese. Remove skillet and mix cheese into Brussels sprouts and bacon.
Spoon vegetable mixture onto a serving platter and serve as a side dish with your meal.
