Bacon Cheeseburger Casserole

This bacon cheeseburger casserole has it all. It includes ground sirloin beef, smoked bacon, onions and pepper jack cheese. Then it’s topped with bread and butter pickle slices, red onion and grape tomatoes.

Bacon Cheeseburger Casserole

2 pounds ground sirloin beef

1 large yellow onion, chopped

2 garlic cloves, minced

12 strips smoked bacon, cooked and crumbled

3 cups pepper jack cheese, shredded, divided

8 large eggs

1 6 ounce can tomato paste

1 cup heavy cream

1 tablespoon Worcestershire sauce

1/2 teaspoon salt

1/4 teaspoon black pepper

Optional toppings: Dill or Bread and Butter pickle slices, chopped red onion and cherry or grape tomatoes, halved.



Preheat oven to 350 degrees

In a large skillet, cook beef, onion and garlic over medium until beef is no longer pink and onion is tender, 10-12 minutes, breaking up beef into crumbles; drain.

Meanwhile, in a large bowl, whisk together eggs, tomato paste, heavy cream, tomato paste, Worcestershire sauce, salt, and pepper until well combined. Set aside.

Transfer cooked meat mixture to a greased 13×9-inch baking dish. Sprinkle with bacon and 1 cup pepper jack cheese. Next pour egg mixture evenly over beef casserole mixture. Sprinkle with remaining 2 cups pepper jack cheese.



Bake, uncovered, until set and golden brown, 30-35 minutes. Let stand 10 minutes before serving. Garnish with toppings as desired.



Plate and serve. If desired, you could scoop some into a taco shell, between two halves of a burger bun or wrap it in a flour tortilla.
