Lavender-Honey Baked Pears with Goat Cheese & Walnuts
2 firm red or green pears, halved and cored – Use firm pears, such as Bosc or Anjou as they hold their shape while baking
4 ounce (about 1/2 cup) goat cheese, softened
2 tablespoons raw honey
1/4 teaspoon culinary lavender buds, lightly crushed
1/4 cup walnuts, toasted and chopped
Dried thyme leaves (optional garnish)
Warm the honey slightly, about 10 seconds in the microwave.
Next, lightly crush the lavender buds in your palm to release their aroma then stir into the warmed honey. Set aside and let steep while you prep the pears.
Not a fan of lavender? Swap in rosemary or thyme.

Preheat the oven to 375 degrees.
Place the corded pear halves cut-side up on a baking sheet. Bake for 10 minutes to soften slightly.
