This Cherry Tomato Caprese Salad is a refreshing, vibrant dish that’s not only easy to make but also packed with flavor.
2 cups cherry tomatoes, halved
8 ounces fresh mozzarella balls (bocconcini or ciliegine)
1/4 cup fresh basil leaves (torn or whole, as you prefer)
2 tablespoons extra virgin olive oil
1 tablespoon balsamic vinegar
Salt and pepper to taste
Wash the cherry tomatoes and cut them in half.
If using larger mozzarella balls, you can cut them into bite-sized pieces. If they’re the smaller balls, you can leave them whole.
In a large mixing bowl, combine the halved cherry tomatoes, mozzarella balls, and fresh basil leaves.
Drizzle the olive oil and balsamic vinegar over the salad. Season with salt and pepper to taste, and toss everything gently to combine.

You can serve this salad immediately, but it also tastes even better if it sits for about 10 minutes to let the flavors meld together.
