Instant Pot Pinto Beans with Pulled Pork
2 cups dried pinto beans *See Cook’s Notes
3 cups chicken or vegetable broth – Recipe here for Chicken stock
2 cups cooked pulled pork
Fresh cilantro for garnishing
Cook’s Notes
Rinse the dried pinto beans under cold water. If you have time, soak them for 4 hours or overnight, as soaking can help soften the beans, leading to more even cooking and a creamier texture.
Soaking the beans can also help reduce the gas-producing effects they may have on digestion.
When beans are soaked, some of the complex sugars (oligosaccharides) that can contribute to gas are broken down and leached into the soaking water. Discarding this water before cooking can help decrease the gas production when the beans are consumed.
Pressure Cooking the Beans
To a 6-quart Instant Pot, add the soaked pinto beans followed by 1/2 teaspoon salt and the chicken broth. Make sure the broth covers the beans by about an inch.
Close the lid of the Instant Pot, ensuring the valve is set to sealing.
Set the Instant Pot to pressure cook on high for 30 minutes if beans are soaked, or 40 minutes if not soaked.
Once the cooking time is completed, allow for a natural pressure release for 10 minutes, then carefully switch to quick release for any remaining pressure.
After the pressure is released and the lid is safe to open, stir the beans to check for tenderness. If they are not soft enough, you can cook them for a few more minutes under pressure.
Carefully remove 1 cup of the liquid. Save in a jar with a tight lid in the refrigerator for another use, such as making this Instant Pot Brown Rice.
Gently fold in the cooked pulled pork. Mix until the pork is heated through and well combined with the beans. Taste and season with more salt if necessary.
