Instant Pot: Frijoles Charros
Frijoles Charros is a dish that not only finds its roots in the rustic cuisine of the Mexican charros but also exemplifies the kind of sustenance favored by cowboys who required energy-rich food.
2 cups dried pinto beans, soaked overnight
6-8 cups water or chicken broth (find recipe HERE).
1/2 pound (about 6 slices) bacon, diced
1/2 pound Mexican chorizo
1 yellow onion, chopped
3 garlic cloves, minced
8 ounce can diced tomatoes
1-2 jalapeño peppers, diced
1 teaspoon cumin
1/2 teaspoon black pepper
Salt to taste
1-2 bay leaves
1/4 cup fresh cilantro, chopped
Queso fresco or sour cream for garnish
Set the Instant Pot to Sauté mode.
Add diced bacon, and cook until it begins to render fat. Next, add the chorizo and continue cooking until the meats are browned.
Add the chopped onion, and sauté until translucent, about 4-5 minutes.

Stir in minced garlic, diced jalapeños and continue cooking until fragrant, about 2-3 minutes.
Add the soaked and drained pinto beans. Pour in 6-8 cups of water or broth, making sure beans are covered.
Stir in 1 cup canned tomatoes, cumin, black pepper, salt, bay leaves, and half of the chopped cilantro.
Secure the lid on the Instant Pot and ensure the valve is set to Sealing.
Set the Instant Pot to Pressure Cook (or Manual) on high pressure.
Set time for 35 minutes and pressure to release naturally for about 10 minutes.
Carefully switch the valve to Venting to release any remaining pressure, then open the lid. Stir in the remaining chopped cilantro. Adjust seasoning with salt and pepper to taste.

Ladle the Frijoles Charros into bowls and garnish with crumbled queso fresco or a dollop of sour cream.
