Instant Pot Cafe Rio Sweet Pork

2 pounds pork shoulder or pork butt, cut into large chunks

1 cup brown sugar

1 can (12 oz) coke cola or similar soda

1/2 cup soy sauce

1/4 cup apple cider vinegar

2 cloves garlic, minced

1 teaspoon ground cumin

1 teaspoon onion powder

1 teaspoon Aleppo pepper, can opt for chili powder – optional for a little kick

Salt and pepper to taste

1 tablespoon olive oil

Optional toppings: diced cilantro, lime wedges, diced onions, sliced jalapeños

Sauté the Pork

Set your Instant Pot to the “Sauté” mode and add the olive oil.

Once the oil is hot, add the pork chunks and season with salt and pepper. Sauté for about 3-5 minutes until browned on all sides. You may need to do this in batches. Remove the pork and set it aside.

Prepare the Sauce

In the same pot, add the minced garlic and sauté for about 30 seconds until fragrant.

Add the Dr. Pepper, brown sugar, soy sauce, apple cider vinegar, cumin, onion powder, and chili powder (if using). Stir well to combine.

Pressure Cook

Return the browned pork to the pot and stir to coat it in the sauce.

Close the lid of the Instant Pot and ensure the valve is set to “Sealing.”

Select “Manual” or “Pressure Cook” and set the timer for 60 minutes on high pressure.

Once the cooking time is complete, allow the Instant Pot to naturally release pressure for about 15-20 minutes. Then, carefully switch the valve to “Venting” to release any remaining pressure.

Shred the Pork

Open the lid and transfer the pork to a cutting board. Use two forks to shred the pork into bite-sized pieces.

If desired, you can thicken the sauce by selecting “Sauté” mode again and letting it simmer for a few minutes until it reduces to your desired consistency.

Combine and Serve

Return the shredded pork to the pot and stir it into the sauce.

    I love anything sweet and this sounds great Randy. I don’t care for the instant pot or pressure cooker but this would be great in the slow cooker too.
