Basil Pesto Linguine With Chicken Andouille Sausage And Tomatoes

1/2 pound linguine, cook according to package instructions

1 pound chicken breast, skinless, boneless, cut in 1/2 inch chunks

2 chicken andouille sausage links (already cooked), remove casing, chopped

1 cup basil pesto – Find Recipe HERE

15 cherry tomatoes, cut in half

Sprinkle chopped chicken pieces with salt and black pepper.

In a large skillet, heat 1 tablespoon of olive oil over medium heat.

Add the chopped chicken pieces and cook until browned, about 5-7 minutes.

Next add the chopped chicken Andouille sausage, continue cooking until warmed, about 2-3 minutes.

Add the halved cherry tomatoes and cook for an additional 3-4 minutes until they start to soften. Season with salt and pepper.

Add the drained linguine to the skillet with the sausage and tomatoes followed by the pesto sauce and toss everything together, adding reserved pasta water as needed to achieve the desired consistency.



Plate and serve with Parmesan cheese (optional).

    Chicken andouille sausage? All I have ever bought is Andouille smoked pork sausage. I googled what stores have it where I live and Sam’s Club and Walmart have it. I am buying it next time we go to Sam’s Club. Thank you!
