
Roasting cherry tomatoes with garlic and thyme is a simple and delicious way to elevate their natural sweetness and add depth of flavor.
To make this dish, simply toss cherry tomatoes with olive oil, salt, whole fresh garlic and thyme sprigs.
Take note, this is not the time to substitute with garlic powder. The flavor of the roasted garlic cloves is a key component of this dish and really adds to the roasted flavor.
As the tomatoes roast in the oven they will become slightly caramelized and bursting with tangy sweet juices.
The garlic and thyme add depth and savory notes to the tomatoes, and also infuse the olive oil with a fragrant and savory aroma.
Roast cherry tomatoes with garlic and thyme is a simple yet delicious dish that can be enjoyed as a stand alone side dish or added to pastas, salads, sandwiches, topping pizza, bruschetta or crostini. Blended it together and use as a dipping for crusty bread.

Roasted Cherry Tomatoes With Garlic And Thyme
2 pints (4 cups) cherry tomatoes *See Cook’s Notes
6 cloves garlic, peeled and smashed
4 fresh sprigs thyme
1 cup extra virgin olive oil
1/2 teaspoon Himalayan salt
Cook’s Notes
You can use sweet cherry tomatoes, heirloom cherry tomatoes, grape tomatoes and even rainbow cherry tomatoes (these can include in the mix among others: black cherry, green envy, sun gold, cherry bomb).
Preheat oven to 300 degrees
In a baking dish, mix everything together and spread out tomatoes and garlic in an even layer. Place dish in preheated oven and roast for 60 minutes.

Turn off the oven and leave the roasted tomatoes in the oven for additional 15-20 minutes (optional).
Store in an airtight container in the refrigerator until ready to use. Will store for up to 2 weeks.
When refrigerated, the oil will harden and turns an opaque orange color. This is normal. Remove container from refrigerator and set on counter and allow the olive oil to come to room temperature (about 30 to 45 minutes).
