Trofie Al Rosso Pesto is a traditional Italian dish that combines the perfect balance of flavors and textures. Much like the original version, Trofie Al Pesto, made with pesto sauce .
The star of the dish is the trofie pasta (see Cook’s Notes), handmade and twisted into small, bite-sized pieces. The pasta is then tossed in a rich and vibrant red pesto sauce, made from sun-dried tomatoes, garlic, and basil.
The result is a burst of bold and tangy flavors, perfectly complemented by the nutty and chewy texture of the trofie pasta.
This dish is not only delicious, but it also represents the heart and soul of Italian cuisine, showcasing the use of fresh and simple ingredients to create a truly satisfying meal.
If you are looking for a taste of Italy, this is a dish that should not be missed.
Cook’s Notes
Trofie pasta is a traditional Italian pasta that originated in the region of Liguria.
It is a type of hand-rolled pasta that has a unique twisted shape, resembling little corkscrews or spirals.
This shape is achieved by rolling small pieces of dough between the palms of your hands. It is typically made with just flour and water, making it a simple and rustic pasta.
The texture of trofie pasta is smooth and slightly chewy, making it perfect for soaking up the rich flavors of the pesto sauce.
