Cajun Spiced Brussels Sprouts And Sweet Pepper Frittata is a delightful dish that combines the bold flavors of Cajun seasoning with the earthy taste of Brussels sprouts and the sweetness of mini bell peppers.
The frittata after being cook gently until the eggs are set on the stovetop are then topped with cheese and finished off under the broiler.

This flavorful and colorful frittata is sure to impress your taste buds, as with any frittata, with its unique blend of spices and textures.
Cajun Spiced Brussels Sprouts And Sweet Pepper Frittata
6 large eggs
2 tablespoons grated Parmesan
1/4 cup heavy cream
1 tablespoon salted butter
1 tablespoon olive oil
1 teaspoons Cajun seasoning
3/4 teaspoon dried basil
1/2 teaspoon Himalayan salt
1/2 teaspoon black pepper
1/2 shallot, thinly sliced
1 glove garlic, smashed roughly minced
5 Brussels sprouts, end removed, thinly sliced
5 mini sweet peppers, thinly sliced diagonally, discard seeds
1/2 cup shredded sharp cheddar
To a medium measuring cup, add eggs, Parmesan cheese, and heavy cream. Whisk until combined well. Set aside.
Place a 10-inch nonstick skillet over medium heat. Add butter and olive oil. When butter starts a low sizzle add Cajun seasoning, salt, pepper and dried basil. Sauté until seasoning blooms or becomes fragrant, about 2-4 minute.
Next add shallots and garlic. Continue sautéing for another 3 minutes. Add the the Brussels sprouts and sweet peppers to the skillet and continue cooking, stirring frequently, until they are tender and slightly caramelized.
Add whisk eggs, heavy cream and cheese mixture to skillet pouring in a circular motion until mixture is evenly spread over vegetable mixture. Cook until eggs are just set.

Top with cheese and place under broiler until cheese has melted, about 4-5 minutes. Keep a close eye on skillet as not to burn cheese.
Remove, plate and serve.
