Sautéed Garlic-Butter Brussels Sprouts
1 tablespoon extra-virgin olive oil
1 1/2 tablespoons finely chopped garlic
1 pound Brussels sprouts, trimmed and thinly sliced
1/4 teaspoon salt
1/4 teaspoon ground pepper
1/4 teaspoon crushed red pepper
2 tablespoons unsalted butter
1/3 cup grated Parmesan cheese
Heat oil in a large skillet over medium heat. Add garlic and cook, stirring constantly, until fragrant but not browned, about 1 minute.
Next, add Brussels sprouts, salt, pepper and crushed red pepper. Continue cooking, stirring often, until tender-crisp and still bright green, about 6 minutes.
