Caramel Banana & Walnut Oatmeal
3 tablespoons unsalted butter
1/4 cup dark brown sugar, packed
2 ripe bananas, peeled and thinly sliced

1/2 cup walnuts, chopped
1 cup water
1 cup quick oats
2 teaspoons vanilla extract
1/2 teaspoon ground cinnamon
1/4 teaspoon salt
1/4 cup heavy cream or half-and-half

Melt butter over medium heat in a medium sized pot. Next add brown sugar and stir until the sugar has dissolved and the mixture is bubbling.

Next stir in the bananas and walnuts to coat them with the sugar syrup.

Stir in the water, oats, vanilla, cinnamon and salt. Cook mixture for 5 minutes. Remove pot from heat. Set aside for another 5 minutes.

Before serving, add the heavy cream and mix in.

Ladle into cereal bowls. Optional to garnish with slices of banana and walnuts.
