One Skillet Pumpkin Alfredo Gnocchi With Bacon & Sun Dried-Tomatoes

Gnocchi is a northern Italian staple known as a delicious comfort food. Originating in the cooler climates of Italy where it was better suited to farm potatoes rather than grains.
Mascarpone is an exceptionally velvety smooth fresh cream cheese. The flavor is milky and slightly sweet. It spreads easily and the buttery texture comes from the high butterfat content (up to 75%).

Pumpkin Alfredo Gnocchi With Bacon & Sun Dried-Tomatoes
16 oz gnocchi, cooked according to package instructions and kept warm
1/2 medium yellow onion, diced
6 sun dried-tomato pieces, cut Julian style
6 stripes smoked bacon, cut into 1/2 inch slices
1 tablespoon oil from sun dried-tomato jar
1 – 15 oz. Can puréed pumpkin no sugar or spices added
1 – 15 oz. jar Alfredo sauce or homemade
1/8 teaspoon nutmeg
5-6 dollops mascarpone cheese
Turn broiler to high.
In a medium skillet over medium high heat add bacon pieces and cook until just crisp.
Next, transfer the cooked bacon to a paper towel lined plate to absorb fat. Set aside. Clean out skillet. Set a side.
Cook gnocchi according to packaging instructions. When done set aside and keep warm.
In the same skillet bacon was cooked in, add 1 tablespoon oil from sun-dried tomato jar. When oil shimmers add onion and cook until lucid, about 6-8 minutes.
Next add pumpkin, nutmeg and Alfredo sauce. Stir to combine and bring to a simmer.
Next add bacon and tomato strips and mix in. Add cooked gnocchi and mix till combined.
Add more heavy cream if sauce is too thick, up to 1/4 cup.

Next place dollops of mascarpone over gnocchi mixture. Place under broiler until cheese is semi-melted (about 3-5 minutes). Remove from broiler and mix in.

Plate and serve as a main dish of side dish. Top with Asiago cheese and chopped parsley (optional).
