
Gnocchi is an Italian dumpling made from potatoes. They are small, deliciously light, and tender.
They go with just about any sauce. Favorite flavors among many who enjoy eating this Italian dumpling includes Basil pesto, spinach and cheese.

A dish of Gnocchi is usually eaten as a first course, but can also serve as a side dish to a main course.
Try This Main Course Dish – Oven Roasted Gnocchi with Sausage and Peppers
This homemade gnocchi chicken vegetable soup is the perfect comfort food.

It’s creamy, hearty and very delicious. It only takes one pot and 30 minutes to make.
Gnocchi & Chicken Vegetable Soup
1 tablespoon olive oil
1/2 yellow onion, diced
1 cup carrots, sliced, diced or shredded
1 cup celery, chopped
1 teaspoon minced garlic
3 chicken breasts cooked and chopped into 1-2 inch dices
4 cups chicken stock
1 pint heavy cream
1/2 teaspoon dried thyme
1/2 teaspoon salt
1/8 teaspoon pepper
16 ounce package mini potato gnocchi – plain or a flavor of your liking – we used a Basil Pesto Gnocchi
1-2 cups spinach
Heat the oil in a large pot over medium heat. Add the onion and garlic, sauté until until the onions are translucent, about 2-3 minutes.

Next add vegetables and diced chicken and mix well with onions and garlic.
Next mix in the chicken stock, salt, pepper and thyme. Heat till soup comes to a boil then add the gnocchi and incorporate well.
After adding gnocchi boil for 4 minutes more, then turn down and simmer for 10 minutes or until you see the gnocchi come to the top of the soup.

Turn heat to low. Next add spinach and cook for another 1-2 minutes, or until the spinach has wilted. Then add the heavy cream and stir in well.

Cook another 3-4 minutes to allow cream to warm.
