Instant Pot Blueberry Peach Jam Donut Bites

2 cups all-purpose flour

3 tablespoons granulated sugar

1 tablespoon baking powder

Pinch of Salt

1 large egg

1 ½ cups milk

2 tablespoons unsalted butter, melted and cooled

1 teaspoon vanilla extract

2 tablespoons + 1 teaspoon peach jam, divided

30-35 small blueberries, divided

Add the flour, sugar, baking powder and salt into a bowl and combine.

Mix in the egg, milk, cooled butter, and vanilla extract until combined (it is ok to have some lumps).

Coat silicone molds with butter.

Next add 4-5 small blueberries and 1 teaspoon peach jam to each mold along with the cake mix. After adding cake mix to each mold, give a few stirs to combine.

Just make sure that the molds are no more than 3/4 full even with the berries and jam.

Cover the silicone tray with the silicone cover or with aluminum foil tightly wrapped around the edges to avoid condensation seeping into the donut bites.

Add 1.5 cups of water to the Instant Pot insert followed by the trivet.

Place the silicone mold on the trivet.

Secure the lid and set the sealing valve to SEALING. Select HIGH PRESSURE (or manual) and set time for 8 minutes.

When done allow the pressure to release naturally for 5 minutes and then quickly release the rest of the pressure.

Remove the silicone mold from the Instant Pot and remove the lid or foil. Allow to cool an about 3-5 minutes.

Turn the mold over on to a large plate or tray and carefully tap the bottoms to remove the donut bites without breaking, or use a spoon to pop them out of the molds.
