Gluten-Free BBQ Chicken Lasagna
8 ounces no-boil ready to cook gluten-free lasagna noodles
1 1/2 pounds cooked chicken, shredded
1/2 cup red onion, chopped
26 ounce (approximately 1 1/2 store bought bottles) BBQ Sauce – Find A Homemade BBQ Recipe HERE
15 ounce can black beans, rinsed
1 1/4 cup corn kernels, frozen
1/2 cup roasted red bell peppers, chopped
1 teaspoon chili powder
3 cups Italian 3 cheese blend, shredded (your choice)
1/4 cup spring onions, diced
Preheat oven to 350 degrees
Prepare and add the chicken, red onion, spring onion, corn, black beans, and roasted red bell pepper to a large mixing bowl.
Next add chili powder and BBQ sauce, and mix until well incorporated.
Next coat the bottom of a 13×9 inch glass baking pan with some BBQ sauce.
Next, layer in some gluten-free no-boil lasagna pasta. Spread an even layer of shredded chicken mixture, top with cheese, and continue with two more layers, finishing with a hefty layer of cheese.
Cover dish with aluminum foil and place into preheated oven and bake for 55 minutes, then uncover and bake for an additional 5 minutes.
Remove from oven and let cool about 5 minutes. Plate and serve.
