Chunky Blueberry-Lime Mascarpone Spread

Creamy mascarpone, juicy blueberries, fresh lime and a little maple syrup come together in this simple spread that works just as well at breakfast as it does for dessert.

Unlike a whipped mascarpone spread, this one is intentionally chunky. Some of the blueberries are crushed while others are left whole or in larger pieces, giving the mascarpone plenty of blueberry flavor without turning it completely smooth.

It is especially good spread over toast or croissants, spooned onto pancakes and waffles, or used as a filling for stuffed French toast.

Why You’ll Love This Recipe

This blueberry mascarpone spread only needs a handful of ingredients, but the combination gives you a lot of flavor.

The mascarpone is rich and creamy, the blueberries add sweetness and texture, and the lime keeps everything from tasting too heavy.

Maple syrup adds just enough sweetness without overpowering the berries, and because the blueberry mixture is folded directly into the mascarpone, none of that lime-maple flavor gets lost.

It is also easy to adjust. Use fresh blueberries when they are in season, or frozen blueberries that have been thawed and drained.

Chunky Blueberry-Lime Mascarpone Spread

This Chunky Blueberry-Lime Mascarpone Spread is rich, creamy and full of fresh berry flavor, with lime adding a bright contrast and maple syrup bringing in just enough sweetness.

Keeping some of the blueberries whole or only lightly crushed gives the spread a more rustic texture and makes it especially good for toast, pastries or stuffed French toast.

Prep Time: 15 minutes

Yield: About 1½ cups

Ingredients

1 cup mascarpone cheese, room temperature

1 cup fresh blueberries, or frozen blueberries, thawed and drained

Juice of 1 lime

1 tablespoon real maple syrup

Instructions

Combine the fresh blueberries, lime juice, and maple syrup in a medium bowl.

If using frozen blueberries: Thaw them completely, then let any excess liquid drain off before adding the berries to the bowl with the lime juice and maple syrup. Do not squeeze them dry; just remove the loose thawing liquid.

Using the back of a fork, press down firmly until about half of the blueberries burst, leaving the rest whole or chunky.

Add the blueberry mixture, including all of the juices in the bowl, to the softened mascarpone.

Gently fold everything together until the berries and their juices are distributed throughout the mascarpone, leaving some visible blueberry pieces for a chunky texture.

Serving and Uses

Serve the Chunky Blueberry-Lime Mascarpone Spread chilled or slightly softened at room temperature. It works well:

  • Spread over toast, croissants, bagels or English muffins
  • Spoon over pancakes, waffles or French toast
  • Use as a filling for stuffed French toast

  • Spread on muffins, scones or quick breads
  • Spoon over pound cake or shortcake
  • Layer into parfaits with granola and fresh fruit
  • Serve with graham crackers or crisp cookies for a simple dessert

Storage

Store the blueberry-lime mascarpone spread in an airtight container in the refrigerator for 3 to 5 days.

Because the blueberries and lime juice will continue to release some moisture as the spread sits, you may notice a little liquid separation. Just give it a gentle stir before serving.

For the best texture and flavor, let the spread sit at room temperature for about 15 to 20 minutes before serving so the mascarpone can soften slightly.

Do not freeze. Mascarpone can become grainy and watery after freezing and thawing.

Frequently Asked Questions

Can I use another berry instead of blueberries?

Yes. Raspberries, blackberries or chopped strawberries can work, but each will change the texture and moisture level of the spread.

Softer berries such as raspberries will break down more quickly, while strawberries may need to be chopped before mixing.

Can I use lemon instead of lime?

Yes. Lemon pairs well with blueberries and gives the spread a softer citrus flavor, while lime is brighter and a little sharper.

If substituting lemon, start with 1 tablespoon fresh lemon juice, then taste and add a little more if needed. This helps keep the citrus from overpowering the blueberries or thinning the mascarpone too much.

Can I make the spread sweeter?

Yes. Taste the finished spread and fold in a little more maple syrup if you prefer it sweeter. Add it gradually so the mascarpone does not become too loose.

Can I make the spread completely smooth?

You can. For a smoother spread, mash the blueberries more thoroughly before folding them into the mascarpone.

I would avoid blending the finished mascarpone mixture aggressively, though, because overmixing mascarpone can affect its texture.

Can I substitute cream cheese for the mascarpone?

You can, but the result will be tangier, firmer and less rich. If using cream cheese, let it soften fully before mixing so it blends more easily with the blueberry mixture.
