Instructions
Make the Homemade Apple Syrup
Add the chopped apple, 3/4 cup water, maple syrup or brown sugar, salt, and cinnamon, if using, to a small saucepan.
Bring to a gentle simmer and cook uncovered for about 20–30 minutes, or until the apple is very soft and beginning to break down.
Mash the softened apple directly in the saucepan to release more of its juice and flavor.
Place a fine-mesh strainer over a bowl and pour the apple mixture into the strainer. Use the back of a spoon to firmly press the cooked apple and extract as much liquid as possible.
Slowly pour 2–3 tablespoons of water over the mashed apple remaining in the strainer while continuing to press the fruit. This helps capture some of the concentrated apple flavor still trapped in the pulp.
Return all of the strained liquid to the saucepan and stir in the apple cider vinegar.

Bring the liquid back to a gentle simmer. Cook uncovered, stirring occasionally, until it begins to reduce and thicken.
As the syrup thickens, watch it closely. It is ready when it lightly coats the back of a spoon but still flows easily.
Remove the saucepan from the heat. Keep in mind that the syrup will thicken a little more as it cools.
