The Oxford English Dictionary notes that the term “pancake,” derived from the Middle English terms panecake or ponkake, emerged around the 5th century, during the medieval period.
In the 1750 cookbook Country Housewife’s Family Companion, a cookbook author by William Ellis in 1750, wrote about pancakes as “one of the cheapest and most practical dishes for a farmer’s family, as all the common ingredients are readily available from his own produce.”
With the invention of baking powder in the early 20th century, it was incorporated into pancake recipes.
