German Apple Pancake

German Apple Pancake

3 large eggs

1/2 cup all-purpose flour

1/2 cup milk

1 tablespoon sugar

1/2 teaspoon vanilla extract

1/4 teaspoon salt

2 tablespoons butter

2 large apples, peeled, cored, and thinly sliced

2 tablespoons brown sugar

1/2 teaspoon ground cinnamon

Powdered sugar, for dusting (optional)

Preheat oven to 425 degrees 

In a mixing bowl, whisk together the eggs, flour, milk, sugar, vanilla extract, and salt until smooth. Set aside to rest while you prepare the apples.



In a large ovenproof skillet (preferably cast iron), melt the butter over medium heat. Add the sliced apples, brown sugar, and cinnamon. Cook for about 5-7 minutes until the apples are tender and slightly caramelized.

Pour the prepared batter over the apples in the skillet. Immediately transfer the skillet to the preheated oven.

Bake for 15-20 minutes or until the pancake is puffed and golden brown around the edges.



Remove from the oven and let it cool slightly. Dust with powdered sugar before serving (optional).

Cut into wedges and serve warm, with a dollop of whipped cream or a scoop of vanilla ice cream (if serving as a dessert).
