Brown Sugar Cinnamon Bun Pancakes
Brown Sugar Cinnamon Swirl
1/3 cup brown sugar, packed
4 tablespoons unsalted butter, melted and slightly cooled
1 1/2 teaspoons cinnamon
Cream Cheese Glaze
4 tablespoons unsalted butter
4 ounces cream cheese, room temperature
1 cup confectioners’ sugar, sifted
1/2 teaspoon vanilla extract
2-3 tablespoons heavy cream at room temperature (use this to thin out the glaze)
Sugar Cinnamon Drizzle
1 cup powdered sugar
1-2 tablespoons milk or water
1/2 teaspoon cinnamon
Pancakes
1 1/4 cups unbleached, all-purpose flour
2 teaspoons baking powder
1/4 teaspoon salt
1 cup whole milk, room temperature
1 large egg, room temperature and lightly beaten
1 tablespoon vegetable oil
Nonstick baking spray
Making The Brown Sugar Cinnamon Swirl
In a medium bowl, stir together the brown sugar, cinnamon and melted butter. Set aside.
Place the butter in a small saucepan and heat over low heat to melt it. Remove from the heat and add the cream cheese. Stir until the mixture is smooth. Add the confectioners’ sugar and mix until smooth. Add the vanilla and mix well.
Making The Filling
To thin the gilling out and make it more spreadable, add 2-3 tablespoons of heavy cream and stir well. If it’s still very thick add another tablespoon or two and stir. Set aside.
Making The Sugar Cinnamon Drizzle
In a medium-sized bowl, sift the powdered sugar to remove any lumps.
Start by adding 1 tablespoon of milk or water to the powdered sugar. Mix until smooth. If the icing is too thick, add more liquid a little at a time. Keep adding until you reach your desired consistency. The consistency should be thin for drizzling over pancakes.
Making The Pancakes
Sift the flour, baking powder, and salt into a large bowl. In a separate small bowl, whisk together the milk, egg, and oil. Pour the mixture into the flour mixture. Stir until the batter is just barely mixed. It’s fine if it’s a bit lumpy.
Heat a non-stick skillet or griddle over medium heat and lightly grease with butter or cooking spray.
Per pancake, pour 1/3 cup of batter onto the warmed skillet. You should be able to make 3-4 pancakes at a time.
As the pancakes start to cook, bubbles form on the surface after about 3 to 4 minutes. Add the cinnamon mixture to the pancake to create a swirl pattern. Use a toothpick to swirl the mixture into the pancake.
Cook another 2-3 minutes or until the edges look set. Then carefully flip the pancakes. Cook the other side for another 1-2 minutes. Continue cooking until the pancakes are soft, pillowy, and golden brown.
Allow pancakes to cool a bite.

Layer 2-3 pancakes per plate. Using a pastry piping bag, pipe 4-6 lines of the filling to each pancake. Stack and drizzle with the sugar cinnamon icing.
